Going gluten-free may not be for everyone, however, there are a number of conditions that require individuals to remove gluten from their diet. For example, an autoimmune disorder known as celiac disease, where the ingestion of gluten damages the small intestine.
Gluten is associated with wheat, but is found in a number of other grains and gives dough its characteristic elasticity and bread its chewy texture. For those with gluten intolerance or sensitivity, the ingestion of gluten can cause diarrhea, fatigue, and sudden weight changes, among many other symptoms unrelated to the digestive system.
Untreated conditions can lead to a number of complications including malnutrition, loss of calcium and bone density, neurological problems, and other devastating issues. The most effective treatment is to completely remove gluten from the diet.
